- Molokhia500 g, finely minced
- Chicken1 whole chicken, quartered
- Onion1 medium onion
- Garlic8 cloves, crushed
- Ground coriander1 tbsp
- Ghee2 tbsp
- Bay leaves2 leaves
- Cardamom3 pods
- Saltto taste
- Black pepper1/2 tsp
- Water6 cups

Method
Boil the chicken with the onion, bay leaves, cardamom and salt until cooked, then strain the broth.
Brown the chicken in the oven or in a little ghee until golden.
Bring 4 cups of the broth to a boil, then add the molokhia and stir, leaving the pot uncovered.
In a small pan, fry the garlic in the ghee, then add the ground coriander and stir for a few seconds until fragrant.
Pour the sizzling garlic straight over the molokhia, leave for 1 minute, then serve with the chicken and rice.
