  • Chicken1 whole chicken, quartered
  • Rice3 cups basmati rice, soaked
  • Onion2 medium onions, chopped
  • Tomato2 medium tomatoes, grated
  • Tomato paste1 tbsp
  • Garlic4 cloves
  • Kabsa spice mix2 tbsp
  • Loomi (dried lime)2 dried limes
  • Cardamom4 pods
  • Vegetable oil3 tbsp
  • Saltto taste
  • Water4.5 cups

  • Raisins1/4 cup
  • Carrot1 medium carrot, grated

Method

  1. Sauté the onion in the oil until soft, then add the garlic.

  2. Add the chicken and stir until it changes colour.

  3. Add the tomatoes, tomato paste, spices, dried limes, cardamom and salt.

  4. Pour in the water and let the chicken cook over medium heat for 35 minutes.

  5. Lift out the chicken and brown it in the oven, and add the soaked rice to the broth.

  6. Cover the pot and let the rice cook over low heat for 25 minutes, then serve with the chicken and nuts.
