- Meat1.5 kg bone-in lamb
- Rice3 cups basmati rice, soaked
- Onion2 medium onions, chopped
- Tomato2 medium tomatoes, grated
- Tomato paste1 tbsp
- Garlic4 cloves
- Kabsa spice mix2 tbsp
- Loomi (dried lime)2 dried limes
- Cardamom5 pods
- Vegetable oil3 tbsp
- Saltto taste
- Water8 cups

Method
Fry the onion in the oil until translucent, then add the garlic and meat pieces and stir until browned.
Add the tomatoes, tomato paste, spices, dried limes, cardamom and salt and stir for 2 minutes.
Pour in the water and let the meat cook over low heat for 90 minutes until tender.
Lift out the meat and measure the broth to 4.5 cups, then add the soaked rice.
Cover the pot and cook the rice over low heat for 25 minutes until done.
Spread the rice on a large platter, place the meat on top and garnish with the nuts and raisins.
