Ingredients for 6 people
- Jareesh (cracked wheat)2 cups, soaked for 2 hours
- Chicken1/2 chicken
- Laban (buttermilk)2 cups
- Onion2 medium onions
- Garlic3 cloves
- Cumin1 tsp
- Ghee3 tbsp
- Black pepper1/2 tsp
- Saltto taste
- Water8 cups

Method
Boil the chicken with one onion, the salt and black pepper, then remove the bones and keep the broth.
Add the drained jareesh to the broth and simmer over low heat for 1 hour, stirring often.
Add the laban, cumin and chicken pieces, and stir until the porridge thickens.
Fry the second onion and the garlic in the ghee until golden.
Pour the jareesh into a serving dish and top with the fried onion and ghee.
