Method
Preheat the oven to 175°C and line a square tin of about 20 cm with baking paper.
Chop the 150 g dark chocolate and 150 g butter and melt them over a water bath or in the microwave in bursts of 30 seconds, stirring.
Stir until smooth and glossy and let it cool for 5 minutes.
In a large bowl whisk the 3 eggs with the cup of sugar (and 1 tsp vanilla if using) for 2–3 minutes until pale and thick.
Add the melted chocolate to the eggs and stir until smooth.
Sift the 2/3 cup flour with the 3 tbsp cocoa and a pinch of salt over the mixture and fold gently with a spoon just until combined (add the chopped almonds if using).
Pour the batter into the tin and level the top with a spoon.
Bake at 175°C for 25–30 minutes until the top is dry and slightly cracked and a skewer comes out with moist crumbs.
Let it cool completely in the tin, then lift it out with the paper, cut into 12 squares and serve.
