Timman wa Qeema (Rice with Meat & Chickpea Stew)

- Chickpeas1 cup, soaked
- Onion2
- Tomato paste3 tbsp
- Loomi (dried lime)3
- Seven spices1 tbsp
- Turmeric1 tsp
- Rice3 cups
- Vegetable oil4 tbsp

Method
Boil the meat and chickpeas in the water with salt for 1.5 hours until the meat falls apart and the chickpeas are cooked.
Fry the chopped onion in the oil, then add the tomato paste, spices and turmeric and stir for 2 minutes.
Mash the meat and chickpeas with a wooden spoon into fine shreds and add them to the onion with a little broth.
Add the pierced loomi and simmer over low heat for 30 minutes, stirring until thick.
Cook the rice the Iraqi way with water, salt and ghee, and serve the qeema on top.
