Couscous with Meat & Seven Vegetables
Morocco's Friday dish: steamed couscous with a meat broth of seven vegetables.

- Couscous1 kg
- Meat1 kg bone-in pieces
- Onion2 medium onions
- Tomato2 medium tomatoes
- Carrot4 medium carrots
- Zucchini3 medium zucchini
- Pumpkin400 g
- Cabbage1/4 head
- Chickpeas1 cup, soaked
- Ginger1 tsp
- Turmeric1 tsp
- Ghee3 tbsp
- Vegetable oil3 tbsp
- Black pepper1 tsp
- Saltto taste
- Water3 litres

Method
Put the meat, onions, tomatoes, spices and oil in the base of a couscoussier and stir for 10 minutes, then add the water and chickpeas and boil for 45 minutes.
Moisten the couscous with a little salted water and oil, and rub it between your palms until the grains separate.
Put the couscous in the top of the couscoussier over the broth and steam for 20 minutes.
Tip out the couscous, sprinkle with water and rub again, then add the carrots and cabbage to the broth.
Return the couscous to steam for 20 minutes, adding the pumpkin and zucchini to the broth at this stage.
Rub the couscous with ghee, mound it on a large platter, arrange the meat and vegetables on top and ladle over the broth.
