  • Jareesh (cracked wheat)1 cup cracked wheat, soaked
  • Meat300 g, in small cubes
  • Onion1 medium onion, chopped
  • Tomato2 medium tomatoes, grated
  • Tomato paste1 tbsp
  • Kabsa spice mix1 tsp
  • Black pepper1/2 tsp
  • Vegetable oil2 tbsp
  • Saltto taste
  • Water8 cups

Method

  1. Soak the cup of cracked wheat in water for 1 hour, then rinse and drain.

  2. Chop the onion, grate the tomatoes and cut the 300 g meat into small cubes.

  3. Heat the 2 tbsp oil in a pot over medium heat and cook the onion for 5 minutes until soft and pale golden.

  4. Add the meat and stir over high heat for 5 minutes until it changes colour.

  5. Add the tomatoes, 1 tbsp tomato paste, 1 tsp kabsa spice and 1/2 tsp black pepper (and the cardamom if using) and stir for 2 minutes.

  6. Add the drained wheat, the 8 cups of water and salt (and the stock cube if using), bring to a boil over high heat and skim off the scum.

  7. Reduce the heat to low and simmer for 1 hour, stirring now and then, until the wheat is soft, the meat is tender and the soup thickens.

  8. Taste and adjust the salt; if it gets too thick, add a little hot water.

  9. Ladle into bowls hot, garnish with coriander and serve with lemon if using.
