Method

  1. Cut the 1 kg of chicken breasts into even 3 cm cubes and pat them dry.

  2. In a bowl, mix the 1/2 cup yogurt with the crushed garlic, lemon juice, 1 tbsp tomato paste, 1 tsp paprika, 1/2 tsp black pepper, 3 tbsp oil and salt, plus oregano if you have it.

  3. Toss the chicken in the mixture until fully coated, cover and refrigerate for at least 2 hours.

  4. If your skewers are wooden, soak them in water for 30 minutes so they don't burn, and cut the green pepper and onion into squares if using.

  5. Thread the chicken onto the skewers, alternating with the pepper and onion, leaving a little space between pieces.

  6. Heat the grill or charcoal until hot, or preheat the oven to 230°C on the grill setting.

  7. Grill the skewers for 12–15 minutes, turning often, until the edges are charred and the chicken is white inside with no pink.

  8. Let them rest for 3 minutes and serve hot, wrapped in bread if you have it.
