Ingredients for 3 people

  • Lettuce1 head romaine lettuce
  • Chicken2 breasts
  • Bread2 slices, cubed
  • Mayonnaise4 tbsp
  • Lemon1/2 lemon, juiced
  • Garlic1 clove, crushed
  • Cheese1/2 cup grated Parmesan
  • Olive oil3 tbsp
  • Saltto taste
  • Black pepper1 pinch

Method

  1. Pound the 2 chicken breasts with a meat mallet to an even thickness and pat them dry with kitchen paper.

  2. Season the chicken with salt, black pepper and 1 tbsp olive oil, and heat a pan over medium-high heat.

  3. Cook the breasts for 6 minutes per side until browned and cooked through with clear juices, then rest for 5 minutes and slice.

  4. Toss the bread cubes with 1 tbsp olive oil and a pinch of salt and toast them in a pan over medium heat for 5 minutes, stirring, until golden and crisp.

  5. For the dressing: mix the 4 tbsp mayonnaise with the juice of the half lemon, the crushed garlic, half the cheese, the remaining 1 tbsp olive oil and a pinch of pepper (and 1 tsp mustard if using) until smooth.

  6. Wash the romaine lettuce, dry it well and tear it into large pieces.

  7. At serving time, toss the lettuce with the dressing until the leaves are coated.

  8. Arrange the lettuce on a serving plate, top with the chicken strips, croutons and remaining cheese, and serve straight away.
