Aseeda (Sweet Toasted Flour Pudding)

Method
If using saffron, soak a pinch in 2 tbsp warm water, and measure the 1 cup flour, breaking up any lumps.
Put the flour in a dry pot over medium heat and toast it, stirring constantly, for 8–10 minutes until golden and fragrant.
In a second pot, boil the 2.5 cups water with 1/2 cup sugar, 1 tsp ground cardamom and the saffron water until the sugar dissolves, and keep it over low heat.
Lower the heat under the flour and gradually pour the sweetened water over it while stirring constantly with a wooden spoon.
Press any lumps against the side of the pot with the back of the spoon, and keep stirring for 5 minutes until the mixture is smooth and heavy.
Add 3 tbsp of the ghee, plus the rose water if using, and stir for 5 minutes over low heat until the aseeda firms up and pulls away from the sides of the pot.
Tip the aseeda into a serving dish, make a well in the centre, and pour in the remaining 1 tbsp ghee, melted.
Serve the aseeda hot, with dates if you have them.
